Pumpkin Waffles

Wasatch Waffles is versatile! The onset of Fall brings a craving for all things pumpkin! Try this with your Wasatch Waffles mix today:

2 Cups Wasatch Waffles Organic Five-Grain Stone-Ground Waffle & Pancake Mix

3 eggs

1 1/4 - 1 1/2 cups milk or substitute (1 1/4 if using maple syrup instead of brown sugar)

1/2 cup oil or grass fed butter (healthy oils such as lite olive oil or avocado oil feel good here)

1 Tbsp Trader Joe's or other pumpkin pie spice (or use cinnamon, nutmeg, & ginger)

1/4 cup pure maple syrup or brown sugar

1 cup pumpkin puree (you can also use sweet potato puree)

1/4 tsp salt

Make your own Pumpkin Puree if you can't find it at the store. use a small honey pie pumpkin by cutting in half, taking out the seeds, and roasting open face down in about an inch of water at 375 degrees F for about 25-30 min. Cool then scoop out center into a blender or food processor, leaving the peel behind. Process until smooth. Freeze left overs for the next pumpkin fix.

In medium large bowl add eggs and beat them. Add milk, oil, pumpkin, maple syrup or brown sugar and mix. Add Wasatch Waffle Mix and Pumpkin Pie spice and salt. Mix and cook on your griddle for pancakes or in your waffle iron for waffles. Makes 5-6 7" round Belgian waffles or 10-12 4" pancakes. Enjoy with a glass of hot apple cider or some egg nog.
