Spooky Franken-Muffins

Baking these Monsterous Muffins put me in the mood for Halloween this morning! My most Finicky Foodie was excited to see that they were in the oven when she came to the kitchen for breakfast. What is it about Halloween food that is so fun?!?

"These green goodies get their sweetness from banana and their spooky color from a bowlful of spinach that kids can see but not taste." (Adapted from Family Fun Magazine)

To make these beastly babies, heat the oven to 350 degrees and coat 12-16 muffin cups with cooking spray.


In a large bowl, whisk together

2 cups Wasatch Waffles 5-Grain Stone Ground Waffle & Pancake Mix

3/4 cup (or less) dark brown sugar

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons cinnamon

Optional: add 1 TBSP ground golden flax seed for more protein, there are no eggs in this recipe) 


In a blender, puree until smooth:

1/4 cup oil or melted butter

3/4 cup milk or substitute

6 ounces (6 cups packed) fresh baby spinach

1 large banana

2 teaspoons vanilla.

Fold the liquid mixture into the dry ingredients. Fill each prepared muffin well two-thirds full. Bake the muffins until a toothpick inserted in the center comes out clean, about 18 minutes.

*Optional, Add 1 cup Chocolate Chips and or chopped Walnuts to batter before putting in muffin tins.
